General Sherman IPA
Our IPA is a hop lovers’ delight! The perfect blend of pale and caramel malts gives Gen. Sherman a beautiful copper color. Generous amounts of Northern Brewer, Simcoe, Cascade, and Crystal hops gives this beer a huge citrus-like aroma and flavor.
Firefall Red Ale
For a few weeks in February in the heart of Yosemite National Park, if conditions are just right, the setting sun sets the Horsetail Fall ablaze with reds and oranges; like a fire falling down the cliffs of El Capitan. Photographers and park visitors gather from all over just to grab a glimpse of this natural phenomenon. Our American Red Ale features a bright malt profile with a crisp and refreshing hop balance. The texture from malt and blend of Columbus and Crystal hops complement each other perfectly creating a balanced red ale that anyone can enjoy.
Double Dry Hopped General Sherman IPA
DDH (Double Dry Hopped) Gen. Sherman is our classic West Coast Style IPA unfiltered and dry hopped a second time with additional Simcoe, Crystal, and Cascade hops. Dry hopping lends extra aroma and flavor to any beer. Double Dry Hopping this IPA gives it an even bigger floral citrus flavor and aroma that all hop heads love. Enjoy!
Mt. Whitney Xtra Pale Ale
Mt Whitney XPA (Xtra Pale Ale) is our take on a non-traditional American Pale Ale. Our XPA has a very low use of colored malts, which makes this pale finish dryer and accentuates the hop profile and aroma to the fullest. Traditional Cascade hops are at its core, but we feature “XTRA” amounts of Citra, Amarillo, and CTZ in the back end and in the dry hop for a modern take on this classic style. The idea with this newer breed of Pale is to have a year round session option that is hoppy and can appeal to both our classic and modern craft beer drinker.
Joaquin Murrieta Chile Beer
Our Chili Pepper Beer is inspired by the legendary outlaw Joaquin Murrieta of the San Joaquin Valley, who was said to be both a hero and a thief. The tale says that he was finally gunned down and his head was placed in a jar for proof the Bandido was actually caught and killed. We honor his memory with this Cerveza blended with Habaneros, Local Fresno Chiles, Serranos, Jalapeños.
Sugar Pine Cocoa-Vanilla Porter
Sugar Pine is a robust American porter flavored with organic cacao nibs and Madagascar vanilla beans. Chocolate and roasted malts are the backbone of this beer and compliment the vanilla and cocoa flavors perfectly. Tecumseh Imperial IPA
Tecumseh is the highest ranking member of our General’s army. It is brewed as a Triple IPA but has deceptively smooth flavor and extreme drinkability given the massive amount of malts and hops used to produce this tasty Imperial style IPA. We use Centennial hops in the front end of boil for its hop backbone with Simcoe, Citra, Amarillo and CTZ at the end of boil, whirlpool and in the dry hop additions for a pungent citrus and dank aroma in the flavor and finish.
Smoke Chaser Cherry Wood Smoked Barley Wine
Smoke Chaser comes from the name given to brave firefighters that defend California’s Forests from devastating wild fires. Our American Cherry Wood Smoked Barley Wine is as big and courageous as it’s namesake. An intense malty complexity, combined with an american hop backbone, and a subtle cherry wood smoke finish makes this beer larger than life. With over 100 IBU’s and at 12% ABV, this beer is meant to be sipped and experienced. Enjoy with a fine cigar or share with one with a friend.
Midnight Lightning Imperial Stout
This full bodied American Imperial Stout gets its name from the famous bouldering problem at Camp 4 in Yosemite National Park. The featured chalk lightning bolt is drawn on the rock and on our label to mark the name Midnight Lightning. Our elegantly robust stout is made with dark and roasted malts that give off characteristics of dark fruit, chocolate, toasted wood and espresso. This beer can be experienced fresh or properly cellared for up to 5 years. Enjoy with a nice robust cigar or a rich dessert.
Mocha Midnight Imperial Stout
We have taken our American Imperial Stout to the next level by infusing it with Brazilian coffee roasted by Slow Train Coffee Roasters in Visalia, CA. We also added Ecuadorian Cocoa Nibs and Madagascar Vanilla Beans to accentuate the creamy richness of this Imperial Coffee Stout. Mocha Midnight provides the rush of roasted coffee that all coffee lovers enjoy with the full body texture and mouthfeel of a big Imperial Stout.
Rush Hour Breakfast Stout
Rush Hour is our full-bodied breakfast stout that was created in collaboration with local roaster Café Corazón in Fresno, CA. Each year we use a different strain of coffee hailing from different regions of the world to provide a very unique experience. The coffee is roasted and ground just days before each batch and is cold pressed and infused into our chocolate milk stout. This combination creates a creamy, bold, robust, yet silky smooth breakfast stout. We have truly captured the essence of Breakfast in this beer and hope you “Enjoy the Rush!”
Piece of Cake Dessert Stout
This elegantly delicious sweet stout was created to be the perfect dessert beer. We age our chocolate milk stout on freshly ground coffee, Madagascar vanilla beans, and toasted coconut to represent a similar flavor experience to a German Chocolate Cake. Autumnus Hazelnut Double Brown
Autumnus, Latin for autumn, is our take on a fall inspired beer. Our extra strength classic English brown ale is brewed with heavy amounts of British Maris Otter malt at its core along with brown, honey, and chocolate malt. Molasses is added at the whirlpool stage of brewing to enhance its complexity and rich malt flavors. Hazelnut is added during post fermentation for a luxurious nutty twist on this already unique double brown ale. Year round or when the leaves start to fall, we promise this beer is a treat! Cheers!
Humulus Noctem Double Black IPA
Humulus Noctem or “The Night Hop” is our take on a Double Black IPA. We use a unique blend of eleven different malts including rye, biscuit, and of course a host of dark malts that give our IPA a complex flavor and dark as night color. CTZ is the base hop used as well as heavy amounts of Citra, Mosaic, and Chinook in the dry hop. The combination of malts and hops make this beer so devastatingly dank and flavorful that your taste buds will fear the night without it.
Cucumbier – Cucumber Pilsner
We have taken the phrase “Cool as a Cucumber” to the next level. Cucumbier is a cool crisp Pilsner made the traditional way using Bohemian malts, and Saaz hops. A subtle cucumber flavor rolls gently into grassy notes of the hops, and then finishes soft and smooth. We hand peel and juice hundreds of pounds of locally sourced organic cucumbers to produce this well balanced, exceptional lager. Cucumbier is perfect for floating down the river, hiking in the high Sierra, or simply barbecuing in your backyard. Enjoy!
